In my 25 years as the pioneer in changing traditional pastry to healthy, I have dedicated myself to finding and using the best ingredients at an international level that are delicious and nutritious and provide an outstanding sensory experience. I had the joy and fortune to meet Naturelo on my world tour and I fell in love with her chickpea flour.

I put it to the test in a diverse range of recipes and I developed some desserts that I never imagined and that to date are my favorites.

Being able to use a single gluten free flour at 100% is almost impossible, and this flour in addition to being super healthy is really delicious and its texture will surprise you.

When you find something that is so naturally aligned to what you do it is extraordinary. My goal as an influencer is that the whole world gets to know Naturelo and that it becomes a contribution of Mexico to the gastronomic world.

More than 3 years ago we started a business in Portland, where one of the main protagonists are authentic tamales. We create a special product with traditional flavors, we take great care in using the right techniques and only the best ingredients.

This effort allowed us to enter the American Market with success and to be adopted as part of their gastronomic culture, since Portland is a city with very defined trends in the sustainable and natural, is a city where you can appreciate and enjoy authentic and healthy food from around the world.

However, we lacked a corn masa that could help us in this regard, since in the market we could only found the common flours that in general do not possess the unique qualities that we look for in our dishes.

After a lot of searching I found Naturelo in Queretaro, Mexico with a product that has all the qualities that we needed besides being the only company that makes corn masa flour, sustainably.

Naturelo’s process of Nixtamalization does not waste water, it is a sustainable product that does not to pollute the aquifers and that uses whole grains and preserves its flavors and aromas. This factor and all its qualities convinced us to try them.

When testing the product we realized that we were not only being sustainable but also got an improvement in taste and texture, that the product is very easy to use and that it helped us differentiating our restaurant as a sustainable one which helps us to have a more profitable business.

It was for all this that we committed to get Naturelo to us in the USA. In Naturelo we find an incredible product with the qualities that we were looking for, that complements us and that helps us to create a greater bond between the client and us.

As a consultant I highly recommend a product that maintains the essence and spirit of Masa and allows to show the incomparable Mexican Cuisine.
